We cup dozens of lots and keep only the beans that sing, then rest them to peak before grinding.

Roasting to the curve

Each origin gets its own roast profile, tuned by the second to draw out caramel, fruit and cocoa.

Extracting the shot

Precise dose, pressure and time. We chase the golden window where espresso turns syrupy and sweet.
